Why it matters: UP Diliman's research team says coconut skim milk, often discarded in virgin coconut oil production, could become a plant-based protein source.

The University of the Philippines Diliman (UPD) said one of its research teams looked for ways to turn coconut skim milk into a potential food ingredient.

According to the university, coconut skim milk is a by-product that is often discarded during the production of virgin coconut oil (VCO).

UPD said the team found the by-product could become a valuable source of plant-based protein, and that coconut waste can be turned into a plant-based protein milk alternative.
